Sopapilla Cheesecake

I took a personal day today just to relax from the week since it's been pretty crazy and take care of some things I've been wanting to do/need to do. Like make Sopapilla Cheesecake, a creation from My Yellow Umbrella. I bought the ingredients weeks ago, and the crescent rolls were about to expire, so I made it! I did the reduced fat version to try and make it better. 

Ingredients:
2 tubes of reduced fat crescent rolls
2 packages of neufchâtel cheese
1 cup of sugar
1 tsp of vanilla
3 tbsp melted butter
Sugar and cinnamon for sprinkling
Make one layer of dough in a 9x13 dish. . .
Cream the sugar, vanilla and neufchâtel cheese together. . .
Spread the mixture over the dough and add on the second layer of dough.
Mmmm! Spread the melted butter on top and sprinkle sugar and cinnamon on top. Bake in a 350 degree oven for 20-30 mins. 
I couldn't wait for this to be done!
I think it looks so pretty, and it tastes delicious!
I haven't cut a slice out yet, just taken a taster ;-) But when I do, I'll take a better picture and edit the post. Thanks to My Yellow Umbrella for the delicious creation!

Friday Fun Facts

  • I took a personal day today to recover from the week, and it's been nice to get my errands taken care of and relax. 
  • I have some prospects which I'm excited about following up on next week. When one door closes, at least one more will open!
  • I woke up this morning and made Sopapilla cheesecake - post to come. It's yummy.
  • I went to Target for groceries and kept it under $75!!
  • My Gaia Flow Yoga Living Social pass expires today so I took one last class. And since it was the last one, I took a slightly harder class. It was good - I liked the challenge. And I stuck around long enough for the peppermint neck massage =)
  • I stopped at CVS since I ran out of liquid eyeliner mid eye yesterday and picked up some new mascara and eyeshadow.
  • I lost another pound, so I'm happy about that. I'll take whatever I can get! I'm well on my way to earning my Mischka Badgley shoes. 
  • I really need to crack down on studying this weekend. These tests are going to be here before I know it.
  • Also need to crack down more on losing weight because I wanted the majority of the excess weight off by the end of October, before my class starts. Four weeks!

Craft Projects

I'm been spending a lot of time on Pinterest (and I'm sure I'm not the only one) and have been pinning a lot of craft and DIY ideas. I should be done paying off my credit cards at the end of this year, I'm going to start getting creative. I'm thinking one project a month, depending on the cost and how time intensive they are.

My Luck Temporarily Ran Out

My company has decided to shut down the office that I work in at the end of October. That leaves ten of us without jobs. The option to transfer to another office is there, but requires interviews for those of us who aren't the top dogs. 

I've been lucky up until now. I have survived several rounds of lay-offs. In the advertising industry, it seems to be the norm. Almost everyone I talk to who has been in the industry longer than I have has experienced this before. I was upset at first. It took a lot to hold back the tears in the meeting, and I cried a couple times after that, but then I realized this is an opportunity. I was tired of the data entry part of the job and really wanted to focus more on buying. Now I can look for a media buyer position that doesn't require assistant work, unless it's my own buy maintenance. I'm going to miss the girls here - they are all awesome.

Cramping Hell

Sunday night we ordered pizza from Papa Johns. This story is not a reflection on their pizza, because I love their pizza, but on the ability of my body to process grease and junk. Or more appropriately, the inability. I shoveled several slices into my mouth because I was super hungry and after about 30 minutes I experienced a pretty bad cramping pain in my lower abdomen. Like my body was having a hard time dealing with the food. Monday morning the pain went away but last night at the exact same time as Sunday, the cramping came back and it's bad. I woke up and it's still here! It just won't go away. I've taken pepto, drank water, limited food. It hurts and I'm being a baby about it. I really hope this goes away soon before I lose my will to do anything. 


The past few days have been a tad rough, but hopefully I'll be back to my peppy, slightly more interesting, self soon.

I can't come up with a witty or remotely interesting title for this post

Perhaps because there is remotely nothing witty nor interesting about what I'm going to write. . . I didn't even write my usual Sunday post because I literally had nothing to say. The weekend was pretty uneventful. We watch the Resident Evil movies, I caught up on Grey's Anatomy, watched The New Girl (like!) and The Playboy Club (it's ok) and we watched Independence day last night after ordering pizza which, in hind sight, was a bad idea because a) it always takes S forever to order pizza so I end up eating 2 hours later than I wanted to and b) I don't think my body is used to this kind of food anymore because I ended up with stomach cramps that lasted until this morning. I picked up Gigi's for us on Saturday, and those have been delicious. I guess it's just grease that my body dislikes, not sugar. Or fat. Although a whole Gigi's cupcake will put me into a sugar coma. One half is ok though. And just as delicious. AND THEN I have more the next day! I'll post up some pics of those cupcakes soon. Oh, I did go to yoga, and to the gym to burn off said cupcakes. That was nice. I tried studying, to no avail. Just means I have to buckle down during the week. I looked at my planner today and I'm taking the first test in 4 weeks. FOUR WEEKS! That crept up fast. So, here we are on Monday morning, facing a long work week. Can you believe it's the end of September already?! We're in 4th quarter! Time is just flying by and it'll be Christmas before we know it! So, that's all really. I have a couple of legitimate topics floating around in my head that I'll see if I can get down on paper. Well, screen. Since, ya know, this is on a computer and not paper. But you knew that. Ok, enough with the rambling. I hope you had a great, and probably more coherent, day than I did!

Slow Cooked Meatballs

Alright ya'll! I finally sat down and wrote this post! I know you have been waiting with bated breath, and for that I apologize ;-)


I decided to make these slow cooked meatball today that A*D recommended to me from Can You Stay for Dinner?
The ingredients:
Meatball ingredients:
1lb of lean ground turkey or ground beef.
1/2 cup of fresh bread crumbs (fresh is better)
1 tbsp of dried oregano
2 tbsp of minced basil, fresh if you've got it. I used dried. 
1/4 of finely grated parmesan cheese
1/4 tsp of salt
1/2 tsp of pepper
1/4 cup of milk


Sauce ingredients:
1/2 large onion, chopped
2 cups of marinara, or any tomato sauce. As you can see, I used Classico. 


Combine the meatball ingredients using your hands. Don't overwork the meat, because it will get tough. It feels a little nasty, but it's kinda fun too!
When the ingredients are combined, start rolling the dough into balls, about 1 inch - 1.5 inches in diameter. Keep them all roughly the same size so they cook evenly. If you look below the meatballs in this picture below, you can see I scattered the chopped onion on the bottom of the crock pot before pouring the meatballs in.  
Then add the sauce. Make sure to coat all the meatballs. 
Leave to cook for 6-8 hours. I served them up alone, with some cheese on top. They were very delicious and pretty moist for turkey. It would be even more tender if made with ground beef, sirloin maybe. 
Another quick and low maintenance dinner. I haven't made these again yet, but with the winter coming I will definitely be trying them again with beef!

  • This week marks 3 years since S and I met
  • We're celebrating with Gigi's, oh yes we are!
  • I started studying for the HESI and TEAS. . .multiplying decimals and fractions is hard. How did I make it through Business Calculus in college?
  • I am happy to announce I'm getting more people hooked on Pinterest. You're welcome, Pinterest.
  • I made a craft for S while at work today using office supplies. Shhh, but it was pretty genius.
  • I would like to do more crafty things that are quick and easy. I'm sure Pinterest can help me out there.  
  • I have a lot of TV to catch up on this weekend - I'm happy new shows are back, but I think I watch too many and end up wasting away my weekends!
  • The weather here in Texas has cooled down. And by cool, I mean in the 80's & 90's instead of 100's. But I'm hoping it stays this way, because it's really nice. 
Yay for the weekend! Make the most of it - I know I will :)

Another Fun Weekend

I'm really bad about posting in a timely manner lately. Like the slow cooked meatball post. It's still here, pending. I'll get around to it. 

Man, I started this post like two days ago, what is the deal!? Ok, I'm gonna finish it right. . . NOW!

One of my college BFF's, Stacy aka Life of Grace, came up to visit last weekend. She arrived on Friday and left Sunday - short but sweet. I'm super glad she came. I hadn't seen her since December 2010. I hope we get better at visiting more regularly. I'd like to visit Austin before the year is over, but if not then definitely around my birthday!

So, Friday night we stayed in and made mini lasagnas! They were just as good as the first time around, which made me happy. We cracked open a bottle of Moscato (yuuuuum!) and chowed down. The prep time was so much faster with a helper and when I wasn't taking a million pictures! Honestly, I forget if we did anything after that. I just remember going to bed because it was getting a bit late and we planned on going to hot yoga in the morning.

Hot yoga in the morning. We had a substitute teacher because the regular was out. . . and this chick was crazy. I think she forgot it was beginners class "Gentle Waves" because it was so difficult. She had us holding poses for EONS. And she was wanted us to be contortionists. We survived, but barely. We headed home and made some breakfast and got ready to go see The Lion King in 3D!! I love The Lion King. It might be my favorite Disney movie. We bought tickets early and then went to the mall to pass some time. Stacy was looking for a big floppy hat for her upcoming vacation, and after walking from one end to the other, we found one! I am apparently a good luck charm for people wanting to find a specific item. Cap B wanted a fuchsia dress that would go with cowboy boots, and Stacy wanted a big floppy hat at the end of summer. Pretty hard items to find, but we did it!

Back at the theater, icee's in hand, we watched the movie. Most of the kids in the theater were well behaved. At one point, the kid behind me kicked my chair, but I figure I couldn't get bad because I was the one who wanted to see a kids movie. After the movie we went to Target and picked up a snack and some groceries. We headed home to relax and ended up watching Casino Royale. I love James Bond movies!

For dinner we decided on Taco Diner, because I really wanted Stacy to try a Mambo Taxi. I thought they were pretty strong, but apparently I'm a weenie. The food was delicious, even though we both ordered enchiladas and what came out was pretty much a taquito with sauce on it. Oh well, it was still delicious! When we got home we put another bottle of wine in the fridge, but never got to open it. I think we were both beat after running around all day. But it was fun. I really miss having my friends close by.

Sunday morning S wanted to play Kinect and show Stacy what it was all about, so we played soccer, bowling, ping pong and javelin. Let's just say I officially suck at javelin. And I think bowling hurt my arms. I was sore for a good two days! But it was fun, and also sweaty. After Kinect we got ready for the day and I was wracking my brain trying to think of something to do and somewhere to go when I had a flash of brilliance! Sushi! I never really get to eat it since S doesn't like it, so I'm always suggesting it to friends! Stacy loved the idea, so off we went to Blue Fish. I'm so in love with the Ahi Tower, so we got one of those and some edamame to start. We picked three rolls, which seemed to be the perfect amount - Hawaiian, sundae and rainbow. Everything was just delicious. One thing I have noticed about Blue Fish is that it is FREEZING every time I'm there. Even with a cardigan I was chilly.

After sushi, Stacy headed off to see some friends who just had their first baby because going back to Austin and I went home to start a Vampire Diaries marathon with S. It was really great to see her and we pretty much talked non stop which was awesome. I was sad that she was leaving, but hopefully we'll manage to get together again soon. Plus, I have studying to do. I wouldn't be much fun anyway.

Sunday's Random Tidbits

I feel like I say this every week, but the weekends always go by too fast. Especially when my friends come to visit!

  • I'm sad Stacy had to go back home. We had fun, but I kept forgetting my camera which was annoying.
  • We saw The Lion King 3D on Saturday, and I loved it! I'm totally buying the movie when it comes out on blu ray. 
  • I don't know if I previously mentioned that I found frozen mango at the store, but I did and it's awesome. 
  • I pulled all my study guides for the TEAS and HESI together and it's time to get serious starting today. Study, study, study!
  • I need some new hair styles. I'm sick of high bun, low bun, get out of my face bun. 
  • S and I have been having a Vampire Diaries marathon all afternoon - he bought the first and second season on blu ray. Love this show!
  • I'm in pain from hot yoga yesterday. We had a substitute, and she was crazy. I don't think she's ever taught beginners before. 
  • I'm officially delegated a "Super Shopper", because no matter what people are looking for me, whenever they go shopping with me they find what they want! 
  • It's almost time to look for a new apartment. I'm going to start drafting our notice email, and the horrific review I'm leaving on this place, complete with roach pictures. Oh yes, I have pictures. 
  • I wish I could wake up in the morning and have it be Sunday again. I really don't want to spend a whole week at work!

Friday Fun Facts

  • Stacy is coming to visit today, yay!
  • I forgot my lunch =(
  • So I went to Potbelly Sandwiches! Love their roast beef on wheat. And I treated myself to a cookie. It was delicious.
  • I finally got a new spare tire, two years after I had my flat. 
  • And today my car is bouncing because they hoisted it in the air and messed with the shocks. Or something. Whatever, it's like driving in a freakin' bounce house.
  • I'm registered for both the TEAS and HESI now; taking both at the end of October. Only 6 weeks, so I'd better start studying!
  • OH! Found another roach in the kitchen. Awesome.
  • Have you ever tried frozen mango chunks? Because if you haven't, you should. They're delicious. I pack some to take to work and by the time I get here they have defrosted, but are still cold and delicious. I like fruit so much more when it's cold. 
  • The Lion King is back in theaters for two weeks, and I really want to go see it! I love that movie!
  • We have another cold snap here right now, and I'm hoping it sticks around. I don't want to go back to 100+ degree weather. I'm ready for boots and coats weather. I might live in the wrong place.

TMI?

Ya'll know how much I loooooove crickets. There is just no escape! I went to the bathroom, and just as I'm rebuttoning my jeans, one comes dashing into my cube, to where I instinctively shout out in my office bathroom "OH MY GAWWWWDDD!!!" 

I stood there waiting for it to leave, so I could escape the now cubicle o' death. I rushed out to wash my hands, looking for it. I basically stood at the sink, half turned around so I could keep my eye on it and not be ambushed again!

If/when I ever meet God, I'm asking him why he created such icky bugs.

Milani Follow Up

Last month after my eyes got better I bought some new Milani makeup during a CVS haul. I have started using the eyeshadow and the Eye Tech Liquid Liner more often and I'm really liking both. I like the liner because the tip is more sturdy than a brush, than the purple liner, and I'm less likely to mess up. Of course, drawing a straight line takes practice, but this pen definitely helps!


I'm contemplating buying another palate and perhaps another color eyeliner, but probably the same pen in a different color since it's working so well for me! I may check out the options this weekend since today was pay day, yay!


I picked up a new Essie polish at Target last weekend, Sexy Divide, which is a really deep, rich purple. I'm trying to convince myself it's fall, even if it is still 100+ outside. I've seen the new Essie fall collection, and I'm not loving it. The colors all seem flat to me. Unless there is a rust/burnt orange shade, I probably won't pick any of those up. Just my personal preference! I feel another haul post coming. . .

More Cupcake Love

kI promise I'm not being paid for these Gigi's Cupcakes posts, they are just that good! I took A*D and Cap B there the weekend they came up, where we bought two cupcakes each for a total of 8 (two for S!). I swear we each crashed into a sugar coma after eating these. My second one I actually halved and made it last two days!

Hot Kiss - A*D's choice. Chocolate cake, buttercream frosting, dipped in ganache.
Wedding cake for S, since he'll only eat vanilla/vanilla.

Hot Fudge Sunday for me! Chocolate cake filled with ganache and topped with buttercream frosting. Don't forget the cherry on top!
Midnight Magic for B. Devil's food cake with chocolate buttercream frosting.
 
I promise these are the best cupcakes I've ever had. If you have a Gigi's near you, go try a sample. If you're a cake/sugar/frosting/deliciousness fan like me, I'll bet anything you love them too!

Dinner with the Family

I love going to dinner with my family. We are a pretty close knit bunch and always have a great time. Throw Grandma in the mix and you've got a party!! Ok, not really, but always fun when we get to go out together. I love spending time with my family.

Grandma headed back to England yesterday and we won't see her again until next year, probably the same time. I think I'm going to try and take more time off next since to make the most of her visit.

Fun With Sizzers

A*D and Cap B call each other "sizzer", which I think is so adorable =) These girls are awesome and are some of my favorite people! They came to visit me over Labor Day weekend, arriving Friday night where I had Sangria waiting for them, and we played scrabble to test our real life Words With Friends skills. They didn't leave until Tuesday morning - it was great they were able to stay so long! I hadn't see Cap B in something like 3 years, so it was awesome to catch up and spend an extra long weekend with her and A*D.

We went to my parents for Labor Day dinner, hung out with the family, Grandma and T. After we headed to Blue Mesa for some farewell cocktails that were pretty delicious. I'll have to remember to go back to that bar!

We saw The Help at the movie grill, and Harry Potter at Cinemark. The girls had never seen it, so S and I went for a third time and enjoyed it just as much! We also watched Something Borrowed on On Demand, which I liked. Although, I've had "Push It" by Salt n Pepa in my head for over a week now!

We took an impromptu trip to Target to pick up spaghetti supplies to make dinner! A*D stopped me from buying more clothes. Guess I should thank her for that ;-) We also went to Gigi's so the girls could try the deliciousness that are Gigi's cupcakes. We each picked out two, and two for S. (These delicious treats get a post all their own!)

We ate at On The Border one night, so we could get our margarita on. A*D and Cap B both got watermelon ones, and I went OG on the rocks. Yum! The kitchen totally got S and my order wrong, and S's wrong AGAIN, so the table got free sopapillas! Score!

I'm so glad these girls came to visit! We had a lot of fun going to the movies, eating cupcakes, driving all oeer, shopping and just hanging out! I can't wait to see them again very soon =) Miss ya'll, girls!

Are you kidding me?

First A crickets, now a SPIDER!! I see this small moving black thing amongst the papers in front of me, so I grabbed them and see a spider! It ran up on my keyboard which I kept hitting with my papers to no avail. It then disappeared between the keys, thinking it was safe. Oh no, my friend. You trapped yourself!

I grabbed the canister of air we use to clean the dust out from between our keys and started blowing air to blow the spider out. It worked! He darted for my work phone but I was too quick for him and smashed him with my ruler. Sorry, I don't save spiders. Or any bugs for that matter.

I win, spider. Universe, stop terrorizing me with bugs. Kthxbye.

Invasion of the Crickets

This time of year seems to bring out the crickets. I can kill most bugs, as you know given my roach situation. But what I can't dispose of are crickets. Why? Because those suckers JUMP! 

I'm sitting at my desk in my office when I hear a noise in the blinds. I didn't think anything of it, because there are little noises around my desk all the time. I heard it a second time, and wondered if it could be a cricket as I had seen some in the bathroom earlier (and yes, it is hard going to the bathroom when there is a cricket running toward you). I forgot about it almost instantly. 

The next thing I know, I see a black thing out of the corner of my eye, hopping onto my files and then down onto a stack of papers next to me. That's when I realized it was a cricket, and as it hopped under my keyboard I  pushed my chair back and exclaimed, "Holy $#*!" I never cuss, especially at work but I was completely grossed out. My coworkers heard my exclamation and asked what was wrong. I told them I had a cricket under my keyboard, and they all chuckled. 

I stood there for awhile contemplating how to remove said invader from my desk. I moved my drink. I moved my cell phone. I got some Lysol from my boss, and gingerly moved the keyboard aside until I could see the cricket. I sprayed once and it scooted back underneath the keyboard as I squealed.

At this point, one of my coworkers came over to save me armed with a trash can and a magazine. She swept the cricket off my desk, into the trash can, and took him outside. I'm pretty sure he's gonna die anyway, since I sprayed him with Lysol. Whatever. Thanks coworker, for saving me from what could have been a very traumatic experience!

Stupid crickets. Stay outside where you belong.

Ten Years Later

I've been reading many blog posts today about remembering 9-11, where people were, how it impacted everyone. I also talked about it with my family. It's crazy to think it's been 10 years. It is an entire decade, but it almost seems like yesterday. Being the crier that I am, everything about this tragedy brings tears to my eyes. It's so sad, so heartbreaking. I don't think anyone who was old enough to remember will ever forget where they were when they heard.


I was a Junior in high school and I was in Algebra II class with my friend Chelsea. I remember the principal coming over the loud speaker and saying something about planes crashing into towers. How do you comprehend that? My next class was English and that's when I saw what had happened. Planes had struck the World Trade Center Towers and the towers had fallen. I freaked out a little because my dad was supposed to fly to New York that morning for a business meeting. I rushed home after school to find my dad in the living room, safe and sound. Unfortunately, many kids were not as lucky as their parents died in the towers, died in the Pentagon, died on flight 93. 


I have choked back tears so much this week, as footage is shown, as people commemorate this date, as we remember all the people who died. I'm not even really an American (still waiting to take the citizenship test), but I sure do feel the same as every other American who watched as their beloved country came under attack. Regardless if you are American or not, none of us here will ever forget. 

It's Football Season

I am usually SO pumped for football season. Coming from a high school with a powerhouse team, and then attending UT during their National Championship season and the VY era, football has been a big deal to me for as long as I've lived in Texas. We had some growing pains when Colt McCoy took the reigns, and my heart pretty much broke when we lost the National Championship to Alabama. I think my love for the game has waned since then. I watched last season as UT struggled, barely scraping by at times. It was heartbreaking and so disappointing. This season started over a week ago. UT has played two games. I have yet to watch one. They've won both, and I'm happy about that, but I can't get excited. I 100% support them, I really do. I'm hoping I find my excitement for football season here soon. I'm not a fair-weather fan who quits watching when they're losing. I always watch to the end, stay to the end, wear orange till the end. S likes sports, but he went to SMU, so he's not a Longhorn fan and all my friends are dispersed, so there is no one to get pumped with. Well, my dad loves UT too and he has the Longhorn network, so maybe I'll just hang out over there on Saturdays and try and get my football fever back.

Friday Fun Facts

Yay for Friday! Even though this has been a short work week, it felt like forever!
  • Had lunch with co-workers today. It was nice to get out of the office.
  • Family dinner tonight at Brio since Grandma is in town (from England) - yum yum!
  • Hot yoga in the morning. I feel as stiff as a board, so this should feel really great, especially on my stiff, cracking back!
  • I need to start studying for the HESI and TEAS this weekend. Planning on taking them both in October.
  • I need to post pictures from last weekend. I did a lot of things with the girls, which is probably why I spent the majority of this week sleeping (aka. recovering)!
  • I had a nightmare the other night that my hairdresser dyed my hair dark and then chopped it all off! the funny part was that I was more concerned with what S would think rather than the fact all my hair was just chopped off!
  • Luckily it really wasn't. But I'll admit the thought has crossed my mind, because it's getting crazy long (and hot and in my way)!
  • I think I'm going to make those lasagna cupcakes again next week. I need some yummy tasting low cal food. 
  • I need to eat more salad. Veggies just always seem to go bad quickly. . . or maybe I don't eat them fast enough.
  • Stacy will be here next weekend and I haven't seen her since last December, so yay!
  • My bangs are so long that I pretty much don't have them anymore. Maybe I should grow them out. Thoughts?

Sunday's Random Tidbits, One Day Late

I know it's Monday, but I've been occupied entertaining A*D and Cap B all weekend! We had a super fun weekend and I'll post some pics soon.

  • I have super cute flowers on my toes from our pedi's on Saturday.
  • I ate way too much
  • I also drank way too much
  • Everything was delicious
  • I'm sad that they have to go home tomorrow
  • I need to get back on the diet and exercise wagon tomorrow!
  • My nails are in super bad condition and I don't know what happened to them.
  • I haven't been to yoga in a week, and I miss it.
  • I don't want to go to work in the morning
  • Why does time always go by too fast when things are good?
I hope everyone had a great Labor Day holiday with friends and/or family. I know I did!

Fun Friday Facts


  • I have no work today! Four day weekend!
  • It's made even better by the fact that A*D and Cap B will be here! 
  • My Grandma arrived yesterday and I can't wait to see her today!
  • I'm just full of exclamation points right now!
  • I've signed up for a Philosophy class to start in October. This is the last pre-req for UT Houston, which has ended up on my list of schools to apply to.
  • I love how people are talking about the end of summer and the beginning of fall just because it's September and back to school. In Texas it feels like summer runs from April through October. It's more summer than any other season! I can't think about fall - boots, sweaters, knits, scarves - when it's still  ONE HUNDRED degrees outside and I've swollen up two sizes. 
  • I currently have a pitcher of sangria getting all happy in the fridge for when the girls arrive. A HG recipe, of course.
  • I did 1.5 hours of cardio on Wednesday, and Thursday I could not walk. I thought I was in better shape than that.
  • I also did 60 push ups and 60 sit ups on Tuesday. I know it's not THAT much, but boy was I feeling that in my shoulders the past two days.
  • Another good thing about it being September now is that prime time shows will be back SOON! It's been a long summer with nothing to watch on TV. And since I'm a media buyer, I got some previews of some new shows and there are some great looking premiers airing this month! (Yes, I know I should be doing better things with my time than watching TV. Oh well)

Chocolate & PB Crescent Rolls

This recipe came from For the Love of Cooking. I was craving something a little sweet while waiting on my meatballs, and decided to throw these in the oven. 

You'll need one package of crescent rolls, peanut butter, and chocolate chips. I used reduced fat rolls and peanut butter. I also used crunchy instead of creamy. I like to crunch my peanut butter!
Unroll all the crescent rolls, and add about a tablespoon or so of peanut butter to the roll and spread in out. I scattered about eight chocolate chips per roll, but you may certainly add more! Roll the crescent rolls up, and bake at 375 degrees for about 10 minutes. Mine were a nice, golden brown when they came out. Just look at the chocolate and peanut butter peeking out!
These are very delicious and hit that sweet craving without making me feel icky like I do after inhaling a giant candy bar. So quick and easy!

Today is Crazy Driver Day

First, I saw a bus broken down in the far right lane that everyone was pulling crazy manuvers to get around.

Next, some car cuts speedily across three lanes in front of me just to hand out in the far right lane and then weave when traffic slows to merge.

THEN, some guy in a Penske truck and towing a trailer, who is in the middle lane of a 5 lane highway, decides he's missing his exit and just DRIVES ACROSS THREE LANES to where we all have to slam on our breaks, and two cars end up in chevrons to avoid being hit by this PSYCHO! No one honked because I think we all just couldn't believe the psychoticness of that move.

And someone always cuts across from the the inside line to try and make the same exit as me. I wish people would plan ahead. Or drive less crazy. 

I'm almost scared to drive home at this point. . .
