I rigged up a double boiler by placing a ceramic dish on a small saucepan. I honestly had no idea if it would work, but it did! Look at the yummy, melty chocolate chips.
I used an ice cube tray because I didn't have anything else. Coat the bottom and side with chocolate and freeze for 10 minutes. When the chocolate is hard you can add in the filling of coconut flakes, coconut oil and agave.
Add one almond per candy
Cover with the remaining melted chocolate.
Freeze! Disclaimer - that is NOT my frozen pizza in the corner.
I had to use some hot water to loosen the candies from the ice cube tray, but I think they came out pretty good! Except that one in the corner. But it's already been eaten.

Suprisingly, I haven't eaten them all yet. I'm hoping to make them last all week. I'll keep you posted.
